Vegan Choc Chip Cookies – Yumminess For All

Over-inspired.

 I have never really had a problem with not having any ideas or writers block when it comes to this blog (touch wood.) My problem is the swirling vortex of vaguely conceived ideas swimming violently around my skull. In the last week I have convinced myself I should make cherry pistachio nougat, lavender sable, more macarons, herbal tea jelly, lemon rosemary syrup cakes, steamed puddings ect ect ect.

In the end as usual it was a shopping trip that cleared my mind (for now) when I picked up a packet of cocoa nibs.

What the heck is a cocoa nib you might ask?It is the roasted,  cracked edible part of the cocoa bean.they are exceptionally high in helpful antioxidants & they taste something like chocolate flavoured coffee beans.

Small Triumphs – Mothers Day & Macarons

No one has attempted as many bad batches of those perfect Parisian cookies as I have. My macarons have stuck to the paper & lost their bottoms, cracked at the top, failed to rise, had big awful air pockets…you name it, I have seen it.

I have tried the French meringue method, the Italian meringue method & the little known Swiss meringue method all with disappointing results. All in all I would say I have made over 35 batches of failed macarons in the last 2 years.

Much of the problem lay within my own patience. I have incorrectly read recipes more times than I care to mention.

Chicken Soup for Cheaters (Sick & Lazy Chicken Soup)

Remember when you were small & you got a cold? You were convinced you might just die but someone was always there for you putting a cool reassuring hand on your forehead, rubbing vapo rub on your chest & making you chicken soup.

When I think about it now, being sick when I was a child was somewhat of a luxury. I never felt more loved.

Unfortunately when you grow up getting sick is not quite so comforting. You need to clean up your own mountains of used tissues & sick buckets, rub your own vapo rub, naively try to recreate that cool comforting hand on your forehead with moist washcloths & perhaps most upsetting if you’re all alone & sick you need to make your own chicken soup.

Mini Baked Oreo Cheesecakes – Dangerously Addictive

I suspect this recipe might produce some die hard Justin Bieber style hardcore crazy fans. Just try putting only 2 of these things out for your 3 kids & see that happens, it won’t be pretty..I promise. (I would put my money on the girls, they fight dirty)

You have been warned.

People don’t so much “eat” mini baked Oreo cheesecakes, it resembles something closer to osmosis. Fascinating really.
