Vegan Choc Chip Cookies – Yumminess For All
Over-inspired.
I have never really had a problem with not having any ideas or writers block when it comes to this blog (touch wood.) My problem is the swirling vortex of vaguely conceived ideas swimming violently around my skull. In the last week I have convinced myself I should make cherry pistachio nougat, lavender sable, more macarons, herbal tea jelly, lemon rosemary syrup cakes, steamed puddings ect ect ect.
In the end as usual it was a shopping trip that cleared my mind (for now) when I picked up a packet of cocoa nibs.
What the heck is a cocoa nib you might ask?It is the roasted, cracked edible part of the cocoa bean.they are exceptionally high in helpful antioxidants & they taste something like chocolate flavoured coffee beans.
So there is a little more to these cookies than meets the eye. They are cane sugar free, vegan & downright good for you. The texture is more like a shortbread than a regular chewy choc chip cookie. The cocoa nibs add a real crunch & complexity to their flavour.
Vegan Choc Chip Cookies
Ingredients:
- 1c whole wheat flour (plus extra as needed)
- 1c kamut or quinoa flour
- 1/2 c rolled oats
- 1c vegan margarine at room temp (I used nutlex)
- 1c xylitol
- 1tsp coconut palm sugar
- 1/2c cocoa nibs
- 1tsp sea salt
- 1tsp vanilla bean extract or paste
- 1/2 tsp baking soda
Method:
- Preheat your oven to 180c/340f & prepare a cookie sheet with baking paper
- Cream the vegan margarine, xylitol, salt & vanilla until pale & fluffy.
- Sift flours & baking soda & add to margarine along with the oats & cocoa nibs. Mix until combined.
- Roll into a ball & wrap in plastic wrap, refrigerate until firm (about 1 hour)
- Roll into balls around the size of a golf ball & arrange on the tray. Sprinkle with coconut palm sugar & squash with a fork.
- Bake for around 20 minutes or until lightly golden.
- Allow to cool completely before serving.
Makes around 20 cookies





I can’t believe how thick they are. They look delicious!
I forgot to list the baking soda in the recipe. It is only a tiny bit but I think it keeps the cookies from being rocks.

Wow! Your cookies are beautiful! They look exactly like a chocolate chip cookie, which for many people (including me) is most definitely appetizing! I wonder, where can I get these nibs? And what is xylitol? Is that difficult to find? Thanks very much for this recipe!

. Cocoa nibs & xylitol should be available at most good organic stores & health food stores. (Maybe try trader joes?) Failing that you can definantly buy them online. Xylitol is a sweetnener extracted from the birch tree which has a lot less calories than cane sugar & has a lower GI. These look like the real deal! I take my little girl to a ‘Toddler Art Collective’ run by a dear friend and many of the parents there have issues with a broad range of food ingredients so I’m constantly on the lookout for morning tea ideas that cater to this. This will definitely go on my list.
